This league has just begun! Because this is a new league, it will be a few days before the allocation draft begins (the countdown timer above shows when the first pick will fire). This is a great time to get a team as you will be able to build it from scratch! If you don't want to wait for the draft, though, check to see if there is a team in an established league that you can take over.

SIM scheduling

Is it possible to alter the sim scheduling at all?

What not lump the draft over 4 straight days and then take the day break? Especially over the weekend when other leagues have the 48 hour sim time.

The reason there is no simming on Sundays is to reserve that day for maintenance, plus to let you watch real football. The reason there's a day after the end of the draft is because otherwise you'll have just a couple of hours between the end of the draft and the first late free agency stage.
